We started Arctic Bites because we were tired of settling. Western New York winters don't ease up, and we figured the food shouldn't either — so we picked a lineup we actually love to eat and made a rule that's never changed since: nothing goes out the window that we wouldn't order for ourselves. Hibachi, sushi, ramen, poke, wings, boba — all of it made fresh, to order, every single time.
The bear showed up early on and just kind of stuck. Maybe it's the layers of fur, maybe it's the way a bear can put away a serious meal and still look pleased about it — either way, it felt right, and it stayed. These days that same bear is on four doors across the Southern Tier and Chautauqua County, and behind every one of them: the same recipes, the same care, and honestly, the same slightly-too-generous portions.
